Prepare Delicious Jamaican Rum Cake

There are so many recipes for this delicious and moist cake, but you probably won't be disappointed with none of them. It really depends on your own taste, but this appealing combination of rum, wine and dried fruits is something really special. What's even better, you can safely keep it in your fridge for weeks, although it probably won't be many leftovers to keep.

So, here are some simple and easy to make recipes to choose from. Maybe it's for the best to start with the traditional Jamaican rum cake. For this, you will need ten eggs, 1 lb. Room temperature butter, 1 lb. Flour, 1 lb mixed chopped dry fruit, 6 oz. Sugar, one tsp. Cinnamon, nutmeg, and vanilla, baking powder, molasses, juice and zest of one lime, white rum, and red wine.

Combine wine, rum, and some spices in one large bowl and soak chopped fruits in. In one bowl mix together eggs with half f prepared sugar, and in another bowl, softened butter with another half. Combine thee mixture with other ingredients and soaked fruits. Save the rest of alcohol used for soaking fruits for later. Add flour gradually, the mixture should be just enough thick to hold the spoon when you put it in.

Bake in lined and greased pan or pans for between one and two hours. Baking time will depend on size of your pan, so you should check the cake every once in a while, using wooden stick or a knife. To keep it moist, put a smaller pan with water on the bottom of your oven. Once done, this delicacy will remain fresh for days, kept in closed container in your fridge. Simply pour more wine on if you think it is needed.

You may use more or less spices, depending on your personal taste. In this case, practice makes perfect, and you will probably have your own recipe in time. Some people use white sugar, while others prefer brown sugar and molasses. In any case, it is simply delicious. Thanks to the wine, this cake is dark anyway.

Some other recipes don't include wine at all. For example, this one. This cake won't be dark, but it will still be rich and moist. So, prepare six eggs, 200 grams butter, chopped dry fruits and flour, and 150 grams sugar. Prepare also different spices such as cinnamon, vanilla and nutmeg, the juice and zest of one lime, baking powder and one cup white rum. For the syrup, prepare one cup butter, one cup white rum, one cup water and sugar and spices.

First, you need to cream the butter with sugar. Add the eggs and continue mixing. Add other ingredients and bake in lower temperature for about one hour, or until the stick comes out clean. Remove from the oven and prepare the syrup, simply combining and cooking all the ingredients for several minutes. Pour over your cake and that's it.

Once you try these recipes, you may play with any other appealing ingredients you want to add. For example, it's really nice to add some cocoa in, or almond flour, or a little bit ginger. If you add just a pinch of chili, the result might surprise you. Use your imagination and enjoy.
